quick and easy meal {waffle sandwiches}

I recently downloaded an iPad app from Real Simple called No Time to Cook. The name had me from the beginning. ;) Since I HATE to cook, I have been trying to come up with quick and easy meals that will work while The Baconator is on his weird night schedule. So far we have tried 3 of the 9 recipes that I bookmarked in my favorites and thus far I have been happily surprised by the results. I thought I would share with you one of the kid’s favorites. It is yummy but it also tops my list because it is SUPER quick and easy.

Ingredients: (You don’t really even need to write these down)
- Frozen Toaster Waffles (I opt for the organic version. My grocery store just so happened to have a BOGO sale on Van’s so I grabbed two. They are really good and you can’t even tell they are gluten free.)
- Dijon Mustard
- 1/2 Pound Sliced Deli Ham (We went for the honey and maple glazed ham. Goes perfect with waffles!)
- 1/4 Pound Sliced Cheddar
- Unsalted Butter

Directions:

1. Place enough waffles on your work surface to make sandwiches. (We made three so I needed six waffles.) Spread one side of each sandwich with mustard.

2. Top with ham, cheese and remaining waffle. Spread the top of each sandwich with with butter.

3. Melt a pat of butter in a skillet over medium heat. Add the sandwiches, butter side up.

4. Cook, pressing down until the cheese is melted and the waffles are golden. It takes about 3-4 minutes on each side.

These things were super crispy, buttery and just plain yummy.
